When you have overripe bananas – make Banana and Peanut Butter Baked Oats for breakfast!
I love Sundays, especially those ones where you don’t have anywhere to be before…. 10.00!
Inspired by a recipe I got online from The Colorful Kitchen, just tweaked and adjusted it a bit!
½ cup rolled oats
1 overripe banana, mashed
200ml low fat milk
1 teaspoon chia seeds
½ tsp vanilla essence
5 chopped dates
A pinch of salt
1 heaped tablespoon crunchy peanut butter
Mix all the ingredients together and bake in a greased mini baking dish for about 25 minutes on 180C
Cool slightly and serve – as is or with a squirt of honey
