Roasted Chicken Pasta
Ingredients:
- 3 cups macaroni (uncooked)
- 6 baby marrows, sliced length-wise
- 2 tablespoons olive oil + 2 tablespoons olive oil (rub for chicken)
- 2 rashers bacon
- Garlic salt
- Pinch of mixed herbs seasoning
- Black pepper
- 1/2 cup frozen peas
- Roasted chicken
- Crumbed ricotta
- Fresh basil
- 2 teaspoons chili seasoning (Pick ‘n Pay Chilli Explosion)
Instructions:

Prepare the Chicken:
- Season the chicken with chili seasoning and olive oil.
- Cook on a Weber grill for about 1.5 hours until fully cooked.
- Shred the chicken into bite-sized pieces.

Cook the Macaroni and Peas:
- Boil water in a large pot and add the macaroni. Cook for 10 minutes.
- Add the frozen peas to the pot and cook for an additional 2 minutes.
- Drain and set aside.

Prepare the Bacon and Baby Marrows:
- In a separate pan, heat the olive oil and fry the bacon rashers until crispy. Remove from the pan and set aside.
- In the same pan, pan-fry the baby marrows for about 3 minutes until they are soft but not soggy.
