A Perfect Pairing: Roasted Chicken Pasta with Durbanville Hills Collectors Reserve The Promenade Pinotage

Ingredients:

  • 3 cups macaroni (uncooked)
  • 6 baby marrows, sliced length-wise
  • 2 tablespoons olive oil + 2 tablespoons olive oil (rub for chicken)
  • 2 rashers bacon
  • Garlic salt
  • Pinch of mixed herbs seasoning
  • Black pepper
  • 1/2 cup frozen peas
  • Roasted chicken
  • Crumbed ricotta
  • Fresh basil
  • 2 teaspoons chili seasoning (Pick ‘n Pay Chilli Explosion)

 

Instructions:

  1. Prepare the Chicken:
    • Season the chicken with chili seasoning and olive oil.
    • Cook on a Weber grill for about 1.5 hours until fully cooked.
    • Shred the chicken into bite-sized pieces.
  2. Cook the Macaroni and Peas:
    • Boil water in a large pot and add the macaroni. Cook for 10 minutes.
    • Add the frozen peas to the pot and cook for an additional 2 minutes.
    • Drain and set aside.
  3. Prepare the Bacon and Baby Marrows:
    • In a separate pan, heat the olive oil and fry the bacon rashers until crispy. Remove from the pan and set aside.
    • In the same pan, pan-fry the baby marrows for about 3 minutes until they are soft but not soggy.
  4. Combine and Season:
    • Mix the cooked macaroni, peas, baby marrows, and bacon together in a large pan, on low heat.
    • Add the shredded chicken and season with garlic salt, mixed herbs, and black pepper to taste.
  5. Serve:
    • Serve the dish with a generous sprinkle of crumbed ricotta and fresh basil on top. Stir through to combine.
