This is a great way to get rid of those leftover Hot Cross Buns. Yes, I know, you are going to ask: “Who’s got leftovers??” Apparently I have! It’s been a busy long weekend, so the Hot Cross Buns got a little stale before I could finish the pack. Hubby doesn’t like sweet stuff – so it was allll mine! Which usually is a good thing 😉
Firstly, speaking of Hot Cross Buns. Woolies once again won the ‘award’ for the best supermarket Hot Cross Buns this year: https://www.timeslive.co.za/sunday-times/lifestyle/food/2018-03-17-where-to-buy-the-best-hot-cross-buns-this-easter/. I should’ve stocked up earlier, because I usually like the extra spicy ones, but it was a bit of a mission to find it on Friday. Yes, I left shopping for Hot Cross Buns until Good Friday. What?? Otherwise I probably would’ve finished it way before the Easter weekend came along! #WhyIAmFat
So this morning I realised that, seeing we were out and about most of the weekend, the hot cross buns needed to be jazzed up a bit for breakfast. Normally I would’ve just toasted it and serve it with warm melting butter, but I felt a little adventurous!
I give you: Hot Cross Bun French Toast!
And it is dead easy. Mix 1 egg and a bit of milk, dunk the Hot Cross Bun halves in it, making sure it is covered properly and pan-fry in butter until the egg mixture is cooked, about 2 minutes a side.
Serve with maple syrup (okay, I didn’t read the label properly, so I bought maple FLAVOURED syrup. It is still good though!) and a spoonful of plain, creamed cottage cheese. Try it, it is really good!
