With this freezing weather, soup is always a good idea. Adopting healthy eating habits just got a whole lot easier with Izelle’s delicious Butternut squash and apple soup.
For all the healthy eating fans, vegetables are always the shining star but you can also lighten up this healthy dish with some biltong instead of chickpeas.
BUTTERNUT SQUASH & APPLE SOUP WITH SPICY CHICKPEAS (OR BILTONG)
Prep time: 15min
Cooking time: 45min
Servings: 1 large pot of soup
2 golden delicious apples diced
1 large onion
2 tbsp olive oil
10g freshly chopped sage
2 tsp teaspoon salt
½ tsp cayenne pepper
1 tsp nutmeg
1 tbsp onion powder
4 cups of hot water
2 cups of unsweetened almond milk
3 tbsp honey
2 kg steamed sweet potato
In a large pot fry the onion, apple and chopped sage leaves in olive oil till golden brown
Add the salt, cayenne pepper, nutmeg, onion powder
Add 4 cups of hot water, and 2 cups of almond milk
Stir in 3 table spoons of honey and let simmer for 30-45minutes.
Blend till desired texture.
For the chickpeas
Pre heat oven to 220’C
Drain the chickpeas, pat dry with paper towel
In a medium size mixing bowl, drizzle the chickpeas with 1 tbsp olive oil, 1/2 tsp salt, 1/4 tsp ground black pepper, and 1 tsp paprika, and sprinkle with dried parsley
Prepare a baking tray with non-stick spray, spread chickpeas on the tray and bake for 15-25 minutes till desired crispness.

BEEF AND GINGER-GARLIC STIR-FRY
Prep time: 10min
Cooking time: 20-25min
2 tbsp sesame oil
1 medium red salad onion or small salad onions
1 heaped tsp Fresh garlic
1 heaped tsp Grated ginger
+_ 600g beef strips or cubes
250g julienne carrots steamed in the microwave by cutting open the 1 corner of the packet and microwaving it for 5 minutes
For the sauce
5 tbsp Soya sauce
2 tbsp Sesame seeds
1 tsp Ground black pepper
3 tbsp Honey
1/2 tsp Salt
1/2 tsp Red chili flakes
Handful Italian parsley
Over medium heat fry the onion, garlic, ginger and beef cubes till golden brown,
Mix the sauce, and add only once meat is cooked, let it simmer till most of the moisture has evaporated,
Add the carrots, stir well and serve warm with rice or side of your choice.
