It is all about getting us back into the kitchen, to celebrate and get involve with cooking at home regardless of gender roles or cooking experience. Cooking should be fun, uncomplicated and a shared experience. Don’t you just love that idea?
The idea of jazzing up the classic 2-minute noodles appeals to me even more! So I tried their “Veggie Delight Noodles” recipe (as found on the www.maggie.co.za website).
Veggie Delight MAGGI Noodles Recipe

The unbeatable curry taste of your favourite MAGGI Noodles and the crunch of lightly-sautéed vegetables, makes this recipe a delight for your taste buds. If someone does not like eating vegetables, just get a hold of this recipe and give it all your love. You might be pleasantly surprised!
Ingredients
4 Servings
1 Packet MAGGI 2-Minute Noodles (Durban Curry)
1 Tablespoon Oil
6 Cloves Garlic (Crushed)
1 Teaspoon Black Peppercorns (Coarsely Crushed)
1 Cup Carrot (Cut Into Thin Juliennes)
1 Cup Broccoli (Small Florets)
1 Cup Baby Corn (Cut Into Thin Round Slices) – I used corn kernels instead of baby corn
1 Cup Spring Onion (Sliced)
1 Pinch Salt
Step 1 Prepare ingredients as mentioned in the list.
Step 2 Heat oil, add the garlic and sauté till fragrant. Add the black peppercorns and vegetables, stir-fry till tender yet crunchy. Now, add salt to taste.
Step 3 Prepare the MAGGI Durban Curry Noodles as per instructions on the pack and put the stir-fried vegetables over the Noodles and serve hot!
I halved the recipe (but used a full pack of 2-minute noodles though), and it worked out well. This is quite a versatile recipe! You can add some grilled chicken or beef strips as an additional protein option. Swop up the veggies with peppers, sugar snap peas, young green beans etc.
