Ovenbaked Butternut with Herbed Cheese and Roasted Peppers

Ideal for Meatless Monday! And so quick and easy to make!  I often have it as a braai side as well.

You will need:

1 red pepper, cored

1/2 buttternut halved

Olive Oil

Woolworths Salad Balls with Rosemary and Garlic

Roast 1 red pepper, drizzled with a bit of olive oil, at 180C for about 40 minutes, then cut into bits

Take 1/2 butternut, sprinkle with a littel bit of olive oil and coarse salt, pop in the oven at 180C for about 40 minutes or until soft. I usually put it in the microwave for a few minutes before ovenroasting.

Take out of the oven. Mix 50g (or more!) Woolies Salad Balls with Rosemary and Garlic with the chopped peppers , season with black pepper and use the mixture to fill the butternut.  Pop back in the oven for about 10 minutes for the cheese to melt.
